This delicious vegan Thai peanut curry with creamy coconut milk and an abundance of vegetables is not only quick and easy to prepare, but also healthy and incredibly delicious!
Ingredients
50 g rice
2 tablespoons peanut powder
100 ml coconut milk
1 carrot
1/3 bell pepper
1/3 courgette
1 clove garlic
1 teaspoon ginger, grated
1 teaspoon curry paste
1 teaspoon soy sauce
1 tablespoon lime juice
50 ml vegetable stock
Preparation
1.Cook the rice according to the instructions on the package.
2. In a small bowl, mix the peanut powder with the coconut milk until you have a smooth sauce. Set aside. 3. Heat some oil in a pan over medium heat. Add the chopped garlic clove and grated ginger and fry briefly until fragrant. Add the carrots, red pepper and zucchini and fry for 3-4 minutes until slightly softened. 4. Stir in the curry paste and fry briefly to release the flavors. Pour in the vegetable stock and bring to a boil. Reduce the heat and stir in the prepared peanut powder coconut milk sauce, soy sauce and lime juice. 5. Cook for another 2-3 minutes until the vegetables are soft and the sauce has thickened slightly. Serve the peanut curry with the cooked rice. 6. Garnish with fresh coriander or parsley and enjoy your delicious vegan peanut curry with peanut powder!
