Preparation
1. Cook the glass noodles according to the instructions on the package. After cooking, drain, rinse and drain.
2. While the glass noodles are cooking, prepare the vegetables: Place the carrot, red pepper, cucumber and spring onions in a bowl.
3. For the peanut sauce, combine all ingredients in a separate bowl and stir well until smooth. Season with lime juice if necessary.
4. Add the cooked and drained glass noodles to the vegetables in the bowl. Pour the peanut sauce over the glass noodles and vegetables and mix gently until everything is well coated with the sauce. Sprinkle with chopped coriander leaves and roasted peanuts.
