A delight of lightness and taste! Our vegetarian glass noodle salad with crunchy vegetables and refreshing dressing is the perfect choice for summer moments of enjoyment! And the best thing: the recipe is incredibly easy and quick to prepare.

Ingredients

Salad ingredients
50 g glass noodles
1 carrot
1/3 cucumber
1/2 pepper
2 spring onions
2 tablespoons peanuts

Ingredients Sauce
2 tablespoons Peanut Powder
1 tablespoon soy sauce
2 tablespoons water or coconut milk
1 clove garlic finely chopped
Some ginger
Some salt & pepper
Some lemon juice

Preparation

1. Cook the glass noodles according to the instructions on the package. After cooking, drain, rinse and drain.

2. While the glass noodles are cooking, prepare the vegetables: Place the carrot, red pepper, cucumber and spring onions in a bowl.

3. For the peanut sauce, combine all ingredients in a separate bowl and stir well until smooth. Season with lime juice if necessary.

4. Add the cooked and drained glass noodles to the vegetables in the bowl. Pour the peanut sauce over the glass noodles and vegetables and mix gently until everything is well coated with the sauce. Sprinkle with chopped coriander leaves and roasted peanuts.
